Now who doesn’t love pancakes? There are so many ways you can make pancakes, with all different types of ingredients but this recipe I have for you today is for my basic vegan pancakes. There are 4 main ingredients, of course you can add other ingredients for different flavourings or toppings as well. It’s prefect for a pre or post workout meal, breakfast, cheat meal or even just a snack!
This recipe makes 6 mini pancakes and you can alter the quantities to suit you.
60g Quick Oats
1 Large Banana
60ml Soy Milk
Cinnamon to taste
Coconut oil (for cooking)
Step 1: Preheat your pan on a medium heat and peel and mash your banana inside of a large mixing bowl
Step 2: Add your oats, cinnamon and half of your soy milk and mix together with a fork.
Step 3: Add the remaining soy milk and continue to mix with fork.
Step 4: Spray your pan with coconut oil and spoon the mixture into the pan one by one.
Step 5: After about 2 minutes you can flip each mini pancake (ensure that the bottom is golden first).
Step 6: Cook for a further minute on the flipped side – cook remaining mixture.
Step 7: Plate pancakes, add toppings (sugarless maple syrup in my case) and enjoy!
